Make This Happen: Hulk Pasta

I recently found this old recipe of mine, and I was so excited to see it! I've been thinking about Hulk Pasta for a while now as it's a perfect summer dish. 

I assure you that it is crazy delicious, and you should try making some this week!

Hulk Pasta
1 lb. penne or other similarly shaped pasta
2 yellow waxy potatoes
1 c. green beans
1/2 c. spinach pesto (my recipe follows)
1 c. grape tomatoes
grated Parmesan cheese (optional)
salt, pepper, olive oil

1. Wash, peel and cut the potatoes into cubes. Place them in a pot of cold water and bring to a boil. Meanwhile, get some oil in a pan and throw in the tomatoes over low heat. Season with salt and pepper. Give them an occasional stir as you work on the pasta. Cook them until the begin to burst.

2. After about 5 minutes, add the pasta to the potatoes and bring back to a boil. Add some salt to the water to season the pasta.

3. Trim and cut the green beans into 1" pieces. After cooking the pasta about 5 minutes, add in the green beans. Cook about 2-3 minutes more, then drain it all into a colander. Add it all back into the dry pot.

4. Add tomatoes and their juices into the pot, then carefully stir in the pesto. Serve with fresh grated cheese, if desired.

Mama's Spinach Pesto
3/4 box of washed fresh baby spinach leaves
2 to 3 cloves garlic
handful of pine nuts
small chunk of Parmesan cheese
1/4 c. to 1/2 c. olive oil
salt and pepper, to taste

Place spinach, garlic, pine nuts and cheese into a food processor (or V-Mix, if you've got one). Blitz. Stream in olive oil until mixture thins out to your liking. Add salt and pepper to taste.
